Butternut Squash Soup

Ingredients:

  • 1 butternut squash, peeled and cubed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup cream or coconut milk
  • 1 tsp nutmeg (optional)
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh herbs for garnish (optional)

Instructions:

  1. Heat olive oil in a large pot and sauté onions and garlic until soft.
  2. Add the cubed butternut squash and cook for a few minutes.
  3. Pour in the broth and bring to a boil. Reduce heat and simmer until squash is tender (about 20 minutes).
  4. Blend the soup until smooth using an immersion blender or in batches with a countertop blender.
  5. Stir in the cream or coconut milk, season with nutmeg, salt, and pepper.
  6. Serve hot, garnished with fresh herbs if desired.
