Ingredients:
- 1 butternut squash, peeled and cubed
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup cream or coconut milk
- 1 tsp nutmeg (optional)
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh herbs for garnish (optional)
Instructions:
- Heat olive oil in a large pot and sauté onions and garlic until soft.
- Add the cubed butternut squash and cook for a few minutes.
- Pour in the broth and bring to a boil. Reduce heat and simmer until squash is tender (about 20 minutes).
- Blend the soup until smooth using an immersion blender or in batches with a countertop blender.
- Stir in the cream or coconut milk, season with nutmeg, salt, and pepper.
- Serve hot, garnished with fresh herbs if desired.
