Chicken Alfredo is a creamy pasta dish that combines tender chicken and fettuccine noodles in a rich, garlicky Parmesan sauce. It’s a comforting favourite that’s perfect for a cosy dinner.
Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 8 ounces fettuccine pasta
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons butter
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the Pasta: Boil salted water in a large pot, add fettuccine, and cook according to package instructions. Drain and set aside.
- Cook the Chicken: Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for 6-7 minutes per side until cooked through. Remove and slice.
- Make the Sauce: In the same skillet, melt butter and sauté minced garlic for about 1 minute. Add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted. Season with salt and pepper.
- Combine: Toss cooked fettuccine in the sauce until well coated. Top with sliced chicken.
