Ideal for serving on chilly days or when you need a little extra comfort!

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice (white or brown)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups spinach or kale (optional)
  • Fresh parsley for garnish

Instructions:

  1. Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery. Sauté until softened, about 5-7 minutes. Stir in the garlic and cook for an additional minute.
  2. Add Broth and Chicken: Pour in the chicken broth and bring to a boil. Add the shredded chicken, rice, thyme, salt, and pepper.
  3. Simmer: Reduce heat to low, cover, and simmer for about 20 minutes (or until the rice is cooked). If using brown rice, it may take about 30-40 minutes.
  4. Add Greens: Stir in the spinach or kale, if using, and cook for another 5 minutes until wilted.
  5. Serve: Taste and adjust seasoning if needed. Ladle the soup into bowls and garnish with fresh parsley.

Enjoy your warm, homemade chicken and rice soup! Perfect for chilly days!
