Tomato basil soup. This is a comforting classic that perfectly blends the vibrant flavours of ripe tomatoes with the aromatic freshness of basil.
Ingredients:
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cans (14 oz each) crushed tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1/2 cup fresh basil, chopped
- Salt and pepper to taste
Instructions:
- Heat olive oil in a large pot over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and cook for another minute.
- Stir in crushed tomatoes and vegetable broth. Simmer for 15 minutes.
- Use an immersion blender to purée the soup until smooth (or transfer in batches to a blender).
- Stir in heavy cream and basil. Season with salt and pepper. Heat through and serve warm.
