Creamy Tomato Basil Soup

Tomato basil soup. This is a comforting classic that perfectly blends the vibrant flavours of ripe tomatoes with the aromatic freshness of basil.

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cans (14 oz each) crushed tomatoes
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 1/2 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and cook for another minute.
  2. Stir in crushed tomatoes and vegetable broth. Simmer for 15 minutes.
  3. Use an immersion blender to purée the soup until smooth (or transfer in batches to a blender).
  4. Stir in heavy cream and basil. Season with salt and pepper. Heat through and serve warm.
