Steak and Potato Skillet

Try this one-pan meal that’s easy to make and perfect for a satisfying dinner.

Ingredients:

– 1 lb flank steak or skirt steak, thinly sliced against the grain

– 4 medium potatoes, diced

– 1 medium onion, chopped

– 2 cloves garlic, minced

– 2 tablespoons olive oil

– 1 teaspoon paprika

– 1 teaspoon dried thyme or rosemary

– Salt and pepper to taste

– Fresh parsley, chopped (for garnish)

Instructions:

1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until they are tender and golden. Remove from the skillet and set aside.

2. In the same skillet, add the remaining olive oil and sauté the onions and garlic for 2-3 minutes until softened.

3. Add the thinly sliced steak to the pan and season with paprika, thyme (or rosemary), salt, and pepper. Cook for 4-5 minutes, stirring occasionally, until the steak is browned and cooked through.

4. Return the cooked potatoes to the skillet, stir to combine, and cook for another 2 minutes to heat everything through.

5. Garnish with fresh parsley and serve immediately.
